All-American Summer Cab Cook-Out

Is your idea of summer include a sunny day and a hot grill? If you miss the usual cook-out fare because you're stuck on the road with just a microwave in your truck, check out these DIY in-cab recipes.


Stuffed Burgers
 
1 beaten egg
1/2 cup whole wheat bread crumbs
1/4 cup milk
2 tablespoons snipped parsley
2 teaspoons country bobs all-purpose sauce
1/2 teaspoon Country Bob's season salt
1 LB ground beef
4 hamburger buns
Veggies or cheese of your choice for the filling
Lettuce and tomato slices if you like
 
In Medium bowl, combine beaten egg , bread crumbs, milk , parsley,
all purpose sauce, season salt. Add ground beef. Mix Well. Shape meat into 8 - 1/4" patties. Place 4 patties in a large Tupperware dish.
 
Filling: You can fill with anything you want. I like to stuff mine with:
Green Pepper
Onion
Mushroom
Cheese
Celery
Garlic
 
When using hard Vegetables. Chop and place in a small bowl and Microwave
on high 15 seconds at a time until tender. Place 3 tablespoons filling in the center of pattie. Place the remaining patties on top and
press edges to seal patties together.
 
Cover and Microwave on High for 4 minutes. Drain off fat. Microwave on High for 4 more minutes or until done and no more pink. Drain on paper towel. Serve on hamburger bun with your favorite fixings.



BBQ Hot Dogs

1- 16oz. pkg. of hot dogs
1 cup of Country Bobs Barbecue Sauce or BBQ sauce
2 Tbsp. of honey
1/2 tsp. prepared mustard

Cut each hot dog into 4 pieces. In a in medium Tupperware bowl, blend BBQ sauce, honey and mustard. Microwave on high for 1 minute. Arrange 10 pieces of hot dog on a glass dish in a circle. pour a little BBQ mixture over hot dogs. Microwave on high for 2 minutes. Put a tooth pick in each piece and serve.



Watermelon Smoothie


6 Cups seedless watermelon
1 cup lemon sherbet
12 ice cubes

Place 1/2 of watermelon in blender. Blend until smooth.
Add 1/2 of Sherbet and ice. Repeat.



Easy S'More
 
2 graham cracker squares
1/2 milk chocolate bar
1 large marshmallow halved
 
 
On plate, top Graham Cracker with Chocolate piece, Marshmallow
and another Graham Cracker. Cook on High for 10 -15 seconds or until Marshmallow puffs. Cool for 1 minute.
