Light & Fresh Spring Recipes for the Road

This month, Debbie shares some spring-inspired recipes for the road. This meal can be easily made in the cab of your truck, with use of a microwave and a blender!
Shrimp or Crab Puffs
1- 6 1/2 oz. can of Crab Meat ( or 1/2 lb. fresh crab meat)
1/4 Cup Chopped Olives
2 Tbsp. finely minced onion
2 Tbsp. finely minced green pepper
2 Tbsp. finely minced celery
3 Drops of Tabasco or hot sauce
1/2 Cup of Mayonnaise
24 Cream Puff shells Halved
In bowl combine Crab. olives, onion, green pepper, celery, hot sauce, and enough mayonnaise to make mixture smooth. Fill shells. Microwave on high uncovered for 1 1/2 - 2 minutes for 12 shells. Eat Hot. You can use Shrimp instead of Crab.
Seasoned Veggies
1/3 Cup Butter
1/2 tsp. Onion Salt
1/4 tsp. Thyme
1/4 tsp. Parsley
1/2 tsp. Country Bobs Season Salt
1 Pound Fresh Broccoli
1 small head Cauliflower
2 Medium Zucchini
2 Medium Tomatoes, Cut Into Wedges
1/4 Cup Parmesan Cheese
Combine butter, onion salt, thyme, parsley and season salt in a one cup bowl. Microwave on high for 45 seconds. Stir and set a side. Trim and cut Broccoli and Cauliflower into florets. Place in large Tupperware dish. Slice zucchini and place to the center of dish.cover with lid. Microwave on high for 9-11 minutes until almost tender. Drain liquid. Arrange tomatoes on top of vegetables around the outside of dish. Pour butter mixture over vegetables and sprinkle with Parmesan cheese. Microwave uncovered on high for 1 1/2 to 2 minutes until tomatoes are warm.
Tropical Smoothie
2 Cartons ( 6 Oz) pina colada yogurt
1 cup of milk
1 can (11 oz) mandarin oranges , drained
1/2 banana
1/2 frozen peach slices
2 Tablespoon + 1 1/2 teaspoon instant vanilla pudding mix
20 ice cubes
Blend first 6 ingredients until smooth. Add ice cubes one at a time until
desired thickness.
